One of the most exciting discoveries is that the balance of fatty acids can profoundly affect inflammation. Much of the problem with inflammatory disorders stems from a lopsided intake of the omega-6 and omega-3 fatty acids. Estimates are that people are eating up to 20 times more omega-6s than omega-3s.
